MAIN MEAL RECIPE
Vegetable Soup

Homemade vegetable soup is easy-to-make-comfort-food; and so good for you! Make a big pot soon!
1 T. oil
1 to 2 stalks celery + tops, chopped
1 large onion, chopped
2 cloves garlic, minced
6 c. water (include in this amount any leftover/saved cooking liquids, thawed)
3 T. dry lentils
2 T. uncooked rice or brown rice
4 to 5 small to medium sized potatoes, peeled and diced
3 to 4 carrots, peeled and sliced
1 + c. chopped cabbage
1 can (14.5 oz.) crushed tomatoes
canned green beans (about 3/4 c. saved out/frozen, for this soup )
at least 4 T. cooked cracked or whole kernels wheat (optional, and good for you, but you won't even taste it)
sea salt and pepper to taste
In large pot, on high heat: sauté/stir celery and onions in oil until deep brown on edges. Add garlic, stir. Add water/leftover liquids, bring to boil. Add lentils, rice; cover and cook 15 minutes. Add the potatoes, carrots, and cabbage. Bring to boiling again, turn heat to medium low. Cover, cook 15 minutes. Turn heat down to low/simmer, add crush tomatoes, leftover green beans, optional cracked wheat; salt and pepper to taste. Cover; simmer on low about 20+ minutes; stir occasionally. 8 generous servings.

This soup is good with biscuits [or flour tortilla crackers, or whole wheat bread].
Excellent Flaky Biscuits

These biscuits are light and flaky, and use part butter or margarine and part shortening. You can also use all shortening or all butter or margarine; do remember the cost when making your choice, so you stay within your food budget.....
1 c. unbleached flour
1/2 c. whole wheat flour
3 T. dry milk powder
1/2 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt
3 T. cold butter or margarine + 3 T. shortening
(can use 6 T. margarine if you prefer)
1/2 c. water (may need 1 to 2 T. more)
1 tsp. vinegar

2 T. unbleached flour
Preheat oven to 400º. Lightly grease a baking sheet. Mix flours, dry milk, baking soda, baking powder, salt. Cut in butter or margarine and shortening. Using a fork: stir in the water and vinegar. Sprinkle the 2 T. of flour on wax paper or clean surface. Drop dough onto a floured surface. With floured hands, pick up dough, turn to coat other side with flour. Gently pat into half-inch thick rectangle; with a serrated knife (cut downward gently, do not saw back and forth) into 12 even squares. Place the squares 2 inches apart on a greased baking sheet (at this point you can gently form the squares into rounds if preferred). Bake 8 to 10 minutes, until light golden.
